It has been awhile since the last time I have written here. My last post was six months ago. I have been busy analyzing important documents.

But I am not here to discuss about that. (Hopefully, I could have it explained more in my different blog) I try to be healthy despite the busy schedule so I am into yoga and dance. Had to buy yoga mat and shoes to be inspired…
Exercise is just the half of healthy living so had to look into my eating habits as well. I do not have oven yet so I cannot try my hands on different recipes. I look into liquids instead. The craze these days is all about juicing. It is healthy and is a good way to detoxify. It took me three months to get a juicer. I bought a simple and affordable juicer. It may not get all the juice out of the fruits and vegetables but it works for me.

The next day after buying the juice extractor (juicer), I bought a lot of fruits and vegetables. I did not follow any recipe, I just follow my gut on what to drop in the juicer.
Here are two samples.

Too bad there is a lot of pulp and fiber left. So I eat the fruits and veggies on their own again. I will use the juicer again on my detox days.
Every time I visit my sister to her place, she order out this delicious pad thai from a nearby restaurant. The sweet, spicy and sour taste of the dish is a perfect combination. It also remind me of my trip to Bangkok. I have been wanting to try my hands on doing a pad thai but the real pad thai is quite difficult to do and the ingredients is hard to find. Yesterday, I went to a grocery and saw this pad thai paste in a bottle and decided right there and then that I will make pad thai for breakfast. I grab the ingredients as stated in the rice noodles pack.
So here’s my first attempt for Pad Thai

Soak noodles in boiling water for 3 minutes and set aside.
Stir fry chicken strips, shrimps, garlic and onion.
Once chicken strips an d shrimps are cooked. Add rice noodles, bean sprouts, tofu,lemon and egg.
Add pad thai paste, sugar and salt.
Serve with ground peanuts and parsley (which i forgot to buy)
In my case, every peso counts. My mother used to say I should walk straight held up my head high so I will have a good posture. But I never get to used to doing that instead I looked down on the ground. I got this habit because I was a clumsy kid and to prevent being tripped by objects in the ground, I have to dodged them. In the process, I have seen some coins and sometimes small denomination bills. It is like treasure hunting. I would have gladly given the coins and bills to the owner if I knew who they were but it is an empty road every time I find a little treasure. These days, people do not mind or care less for coins anymore especially dimes, quarters and peso coins. But for me every coin counts because you would not have a hundred if you do not have a one peso to complete the 99.
I am getting used to my new job that entails to be awake in the wee hours of the night. Some of my batch mates cope up by drinking coffee, sleeping more in the day or eat more due to lack of sleep. I describe myself as a nocturnal person – someone who is awake more at night than morning. I discovered this when I was in college ( either I have this inclination or I developed it that period of my life). My usual study habit is to do all homework and study for exams after dinner time until late at night. I decided to change the habit and sleep early and wake up to study early morning before breakfast. But to my dismay, I found out at the end of the semester, I have lower grades than before. Therefore, I had concluded my brain is more active at night. I do not know a psychologist’s explanation for it but that is what I think of it.
For my grumbling tummy late at night or I say early morning at 4:00 H I have to quiet it down and eat an early morning snack. I do not have yet my baking tools at my new home so I tried making an alternative snack which is easy to do. I also believe it is a healthier option than eating junk foods. I just needed to get a box of nachos at a grocery and prepare the ensalada dip.
Ensalada de Nachos
1 box of nachos (for extra crunch- heat in toaster)
1 green bell pepper
3 medium-sized tomatoes (red/green)
1 white onion
1 lemon (juice)
Finely chopped green bell pepper, tomatoes and onion and mix all together.
