My first Pad THai

Every time I visit my sister to her place, she order out this delicious pad thai from a nearby restaurant. The sweet, spicy and sour taste of the dish is a perfect combination. It also remind me of my trip to Bangkok. I have been wanting to try my hands on doing a pad thai but the real pad thai is quite difficult to do and the ingredients is hard to find. Yesterday, I went to a grocery and saw this pad thai paste in a bottle and decided right there and then that I will make pad thai for breakfast. I grab the ingredients as stated in the rice noodles pack.

So here’s my first attempt for Pad Thai

Ingredients:

rice noodles

chicken strips

shrimps

lemon

bean sprouts

garlic

onion

tofu

egg

ground peanuts

spring onions

parsley

pad thai paste

sugar

salt

Procedure:

Soak noodles in boiling water for 3 minutes and set aside.

Stir fry chicken strips, shrimps, garlic and onion.

Once chicken strips an d shrimps are cooked. Add rice noodles, bean sprouts, tofu,lemon  and egg.

Add pad thai paste, sugar and salt.

Serve with ground peanuts and parsley (which i forgot to buy)

What to do with the Daiquiri?

I got this bottle of strawberry daiquiri before I went to Manila for a two-month stay with my sister. When I came back home, I was surprised the daiquiri was still in our fridge. I cannot drink all of it so I thought of making strawberry daiquiri cupcakes. ūüôā This would be my first time to bake with some alcohol as one of the ingredients and I hope it would be delicious as all the rest of the goodies I have baked in the Wonder Pot. I was not able to get fresh strawberries for the mixture so I replaced it with strawberry yogurt with bits of real strawberries.

Strawberry Daiquiri Cupcakes

Ingredients:

2 cups all-purpose flour

1 cup sugar

2 tsp baking powder

1/4 tsp salt

1/2 cup butter

2 egg whites

2/3 cup daiquiri mix, liquid

1/2 vanilla extract

1 cup strawberry yogurt (or strawberry mixture)

Procedure:

1. Blend all dry ingredients together.

2. Cut into butter and fold in egg whites until batter is combined.

3. Take the daiquiri mix and stir until moistened, finish by folding the strawberry yogurt and vanilla until well blended.

4. Pour evenly in cupcake liner.

5. Bake for 20-25 minutes.

Cream Cheese Frosting

Ingredients:

1/4 cup butter

4 oz cream cheese

1 cup powdered sugar

1/2 tsp vanilla extract

Procedure:

1. Cream the butter and cream cheese together until combined.

2. Add the vanilla extract and mix.

3. Add the powdered sugar, continually taste to get desired sweetness.

4. Piped into cooled cupcakes.

 

The Wonder Pot Stories II

My project of learning and trying my take on sweet delicacies or anything sweet continues. I was given the opportunity to try my hands on a cake. Every time I hear about a cake I envisioned a wondrous chocolate cake. It does not need too much frills and a simple chocolate cake can make my gloomy day – happy. To make it more special I decided to bake my first cake on the day of my parents’ 38th year anniversary using mom’s Wonder Oven of course. I also made sure they will be out for a couple of hours and suggested they watch a good movie. ūüôā

I would like to thank aricooks.wordpress.com where I got the recipe of this yummy chocolate cake. There were too many recipes to try but I try this certain recipe because Ari previously baked this cake recipe using a wonder pot. I had a few adjustments to the recipe and had chocolate glaze with marshmallows.

Wonder Oven

Deep Chocolate Vegan Cake

Ingredients:

1 1/2 cups unbleached white flour

1/3 cup unsweetened cocoa powder

1/2 tsp baking soda

1/2 tsp salt

2/3 cup sugar

1/2 cup vegetable oil

1 cup chilled tea

2 tsp vanilla extract

2 tbsp of apple cider vinegar

Procedure:

Prepare the wonder pot and add water. Generously oil the circular pan and dust with cocoa powder.

In a medium bowl sift flour, cocoa, baking soda, salt, and sugar. In another bowl, combine the oil, tea and vanilla. Pour the liquid into the dry and mix until smooth.

Add the vinegar and stir briefly, the baking soda will begin reacting with the acid right away, leaving pale swirls in the batter. Without wasting any time, pour the batter into the prepared pan.

Bake for 45 minutes to an hour. You can check by inserting a toothpick and if it comes out clean, the cake is ready. Cool on a rack in pan, and serve directly from the pan when cool, or transfer to a plate. Then glaze your cooled cake.

Chocolate Glaze

Ingredients:

5 ounces of dark sweet chocolate

1/4 cup evaporated milk

Procedure:

Mix into a saucepan the chopped chocolate and evaporated milk under a low heat fire until smoothly blended.

I was not prepared to decorate the chocolate cake so I just placed some sliced marshmallows on it for a splash of color.

When parents arrived home from their movie date, they were totally surprised by the chocolate cake. In the end, I am glad they loved it. Even my dad who is not fond of cakes – cannot stop asking for another slice.

The Wonder Pot Stories I

I am fond of eating sweets and decided to have a project in making them. One of the popular sweet delicacies here in my country is called steamed rice muffins or popularly known here as Puto. Two weeks ago my mom told me she still have her “wonder oven” also known as “Wonder Pot”. ¬†According to mom, the pot can bake a cake and can serve also as a steamer. That gave me an idea to jumpstart my mini-project. I searched for recipes in the internet and found lots of them. I decided to follow a recipe from Panlasang Pinoy. Getting the ingredients from the supermarket was quite easy, what gave me a hard time was looking for the puto cups. ¬†I went to two malls and searched in their supermarkets, department stores and specialty stores and¬†almost gave up but the itch to make the puto was stronger. Finally, I was able to find them in the 3rd floor of the kitchen ware section of the second mall. I have never been so happy looking at cups in a department store.

At home

I started to prepare the ingredients and to my dismay I was pouring on the second cup of flour but the mixing bowl is up to the brim already. I decided to make half of the intended recipe and needed to make adjustments to all the ingredients.

Ingredients:

2 cups all purpose-flour

1 cup sugar

1 1/4 tbsp baking powder

1/2 cup evaporated milk

1 1/4 cups water

1/4 cup melted butter

1 piece egg

1/4 tbsp vanilla extract (optional)

small slices of cheese or salted egg (optional)

Procedure:

1. Mix first the dry ingredients – flour, baking powder, sugar in a bowl and then mix the wet ingredients-evaporated milk, water, butter, egg and vanilla extract in a separate bowl.

2. Pour the wet ingredients into the dry ingredients bowl. Mix them until no lumps is visible in the batter.

3. Pour the batter into the puto cups and put slices of cheese and/or salted egg on top of each cup.

4. Place the puto cups into the steamer. Wait for 20 minutes.

After steaming the first batch of puto, I was nervous to see if it was cooked or not and hoping I did not make any mistakes in tweaking the recipe. It looked cooked but I do not know if it will pass the judges discerning taste buds. I had three judges from the taste committee Рmom, dad and my six-year old nephew. Clearly, I got a thumbs up from dad and nephew since they gobbled up the puto in just one second. But mom is a different story. She was perplexed and really looks like a real judge in a cooking contest. Evaluated the appearance and smell before tasting it. Her judgment Рshe did not like the consistency and the color.  She said it tastes delicious but she was looking for a certain roughness and fluffiness that she finds in her favorite puto from the market and it could have had whiter color.

So,  I made another batch using a different type of flour Рrice flour and lessen the vanilla extract. (from 1 tbsp to 1/4 tbsp). The result of which is a rougher, fluffier and whiter puto.

Finally, I get three thumbs up and plus one from me.  My next kitchen adventure would be baking a chocolate cake in the Wonder Pot/Oven.
